Grilled Prawns with Oyster Sauce and Fennel Salad

Preparation Steps

  • 1To make the dressing, place the vinegar, mustard and seasoning into a small non-metallic bowl, whisk well, and then trickle in the olive oil whisking to combine. Set aside until required.
  • 2Combine the fennel, spinach, basil and onions, and then add some of the dressing.
  • 3Heat the olive oil in a pan. Add the prawns and toss for two minutes then combine the oyster sauce, fish sauce and Chinese cooking wine.
  • 4Present the prawns with the fennel salad.
