Mushroom and Rice Tomato Pots

Preparation Steps

  • 1Pre-heat oven to 180˚C.
  • 2Heat olive oil in a wok over medium heat. Add sambal oeleck, stir fry for 1 minute. Add cooked rice and mushrooms. Stir fry until fragrant for 2 minutes.
  • 3Add the sweet soy sauce and stir-fry until the rice mixture is infused with the sauce. Turn off heat, mix in coriander and pine nuts.
  • 4Spoon the rice mixture into the tomatoes. Place tomatoes in a heat-proof dish and bake in a pre-heated oven for 5-10 minutes at 180˚C.
  • 5Sere hot, garnished with extra coriander.
