Deep Fried Tofu in Soy

Agedashi tofu is a simple Japanese way to serve hot tofu. Eaten with chopsticks. Agedashi tofu is an old and revered dish, first included in a 1782 Japanese cookbook.

Ingredients

300 g morinaga tofu
30 ml cornflour
oil (for deep frying)
200 ml dashi stock
3 tbsp Lee Kum Kee soy sauce
3 tbsp mirin
10 g ginger (finely sliced)
1 spring onions (finely sliced)
10 g dried bonito flakes

Preparation

1. Cut the well drained tofu into 4 large pieces and dip into the cornflour. Deep fry the tofu for 6-8 minutes until golden.
2. Place in a bowl, top with some of the ginger, spring onion and bonito flakes, and pour over the warm dipping sauce. (Dipping sauce is made by combining dashi stock, soy sauce and mirin in a small pan and bring to simmer).
