Cucumber Relish
This lightly spiced relish is perfec to serve with fish cakes, or other Asian dim sum items.
Ingredients

white vinegar

white sugar
|

4 tbsp
water
|
|
salt (pinch)

|
0.5 cup
cucumber (finely chopped)
|
|
4
red shallots (finely chopped)
|
|
2 tbsp
ginger (julienned)
|
|

chilli (finely diced)

Preparation

1.
| Combine vinegar, sugar, salt and water in a saucepan and bring to the boil. Simmer until reduced by half and allow to cool. |

| Pour syrup over mixed cucumber, shallots, ginger, and chilli. |
