Mango and Coconut Rice Pudding
The sweet coconut flavour of the rice blends with the tarness of the mango in this dish to create the perfect dessert. Mango cheeks can also be caramelised with palm sugar for extra decedance.

| Soak glutinous rice in hot water for 45 min. Drain well. Add 100ml warm water to rice and microwave rice on high for 5 minutes |

| Add sugar and salt to coconut milk and heat on low until sugar is dissolved. Mix through rice and allow to cool. |

3.
| Shape the rice into balls and serve with diced mango |
