Kaffir Lime Leaves
These dark green, shiny leaves grow in pairs and resemble a figure of eight. They have an unmistakable citrus fragrance and flavour which is imparted to a dish when the leaves are torn or shredded. The young, tender leaves are used in many Thai soups, salads, and curries to provide a distinct tangy flavour and aroma. Other South East Asian cuisines use this wonderful ingredient to enhance fish or chicken dishes.
